If you're like me, you saw the box of tomatoes on the vine at Costco and said, "Oh yummy" and brought home a box. Slicing tomatoes for sandwiches and burgers or dicing for salads and tacos can only be done so far in advance. As I looked at the box yesterday I got a craving for salsa so here's what I did!
NOTES
Kind of like my homemade tomato sauce recipe and my smoothie recipe, this really boils down to your own personal preference. Want to use white onion? Go for it! Want to spice it up? Add more jalapeno seeds or other peppers. Are you someone who thinks cilantro tastes like soap? Don't put it in! Make it your own!
Kitchen tools that will make your life easier for a recipe like this: food processor, emersion blender (stick blender), regular blender, a slap chop for those onions, vegetable choppers can be great for firmer tomatoes but not soft ones (don't come at me if you paint your kitchen with tomato guts).
I don't really have much to say about this except to serve with your preferred chips. I got the best compliment on this from a teenage boy who said it was perfect and then asked if I could make another one that is spicy. Challenge accepted my boy!
